Is Your Product Considered Low-Acid or Acidified?
Low-acid and acidified foods are typically shelf-stable products packaged in hermetically sealed containers and not stored under refrigeration.
Your product may fall into this category if it meets the following:
- Water activity (aw) of 0.85 or higher
- Packaged to prevent contamination (hermetically sealed)
- Not distributed or stored under refrigerated conditions
These products are regulated by FDA under Low-Acid Canned Foods (LACF) and Acidified Foods requirements.
How FDA Classifies These Products:
- Acidified Foods: Final equilibrium pH of 4.6 or below
- Low-Acid Foods: Final equilibrium pH above 4.6
