Is Your Product Considered Low-Acid or Acidified?

Low-acid and acidified foods are typically shelf-stable products packaged in hermetically sealed containers and not stored under refrigeration.

Your product may fall into this category if it meets the following:

  • Water activity (aw) of 0.85 or higher
  • Packaged to prevent contamination (hermetically sealed)
  • Not distributed or stored under refrigerated conditions

These products are regulated by FDA under Low-Acid Canned Foods (LACF) and Acidified Foods requirements.

How FDA Classifies These Products:

  • Acidified Foods: Final equilibrium pH of 4.6 or below
  • Low-Acid Foods: Final equilibrium pH above 4.6

Common Examples: Canned tuna, canned vegetables, roasted red peppers, sauces, and coconut water.
